Papain (CAS 9001-73-4) is a purified proteolytic substance derived from the tropical fruit papaya. It is a thiol protease with wide substrate specificity.

Description and solubility of papaine  (CAS 9001-73-4)

White to light tan, amorphous powder. Soluble in water, the solution being colorless to light yellow and more or less opalescent; practically insoluble in alcohol, in chloroform, and in ether.
